I'll actually give you an answer to your question.
We really liked Andre's downtown - French. In a little house on a quiet street. There's also one at the Monte Carlo. He has a restaurant at the Palms too that was quite good.

SweetPolly - I hope you have a great trip, but rather than being "humored", wouldn't you rather get some tips that help you to get the info you actually WANT? The more specific your title is, the more specific and useful the replies will be as well.
(yes, I've heard the term "joint" used and probably most often in friendly casual places ... "beer joint", "pizza joint" ... a place usually frequented more by the locals than the tourists.)

Sweet_polly: These were my 2 favorite French restaurants -from my trip report:
EIFFEL TOWER RESTAURANT in Paris Las Vegas hotel. The combination of the EXCELLENT food, the spectacular view and impeccable service makes this restaurant THE BEST on our list. You go up an elevator to the restaurant located about a third way up the Eiffel Tower replica. The elevators doors open onto the kitchen. Interesting, don't you think? I must say the kitchen looked very clean. The restaurant is very dark with mood lighting and big bay windows with fantastic views of Vegas. We were sitted at a table for 2 next to the bay windows with views of the Bellagio and its lake/fountain show. Simply lovely. The food was THE BEST we've had. No appetizers this time for us. I had the filet mignon in red wine sauce and potato gratin. Oh my goodness. It was DELICIEUX. My husband had the sauteed filet of salmon with mashed potatoes. Very good, he said.
For dessert, I had creme brulee and my husband had the chocolate souffle. HEAVEN. This is a restaurant with an extensive wine list and impeccable food presentation and service. Total cost of dinner came up to $190 (including a glass of wine, a bottled water, a coke and a 20% tip).
ANDRE'S FRENCH RESTAURANT at the Monte Carlo Resort and Casino. We had dinner there on our 2nd night. It's a VERY SMALL restaurant where reservations are essential. The food was really good there. We both started with a caesar salad, then had the filet of beef in green-peppercorn and cognac cream. The meat was EXCELLENT. We shared a chocolate dessert: a hazelnut fondant with praline and vanilla bean ice cream, and it was DECADENT. This is another restaurant with an extensive wine list. The total cost of our dinner $190 (including a glass of red wine, a bottled water and a 20% tip).
Our only complaint about this restaurant is that it gets really loud. It's in such a small place and it has wood paneling, so sound bounces off the walls. It didn't help that we were sitting next to a table of 8 very loud Brits. We would have enjoyed our dinner a lot more if it hadn't been so noisy. So if you want excellent French food, go there. If you want romance, intimacy and a quiet dinner, don't.

Not from personal experience, just reading here and elsewhere, Mon Ami Gabi @ Paris is a very popular French Bistro, but casual. Bartolotta for Italian seafood at The Wynn has gotten some good reviews. At Bellagio, people seem to like Prime for steaks, Le Cirque for fancy French, and Picasso for country elegance French Mediteranean.
At least these opinions from someone who has not been might start a debate with some more info for you! In the meantime, check Tripadvisor.com for other recs and opinions. Have a great trip!

caribtraveler...:thud: Your reviews really have me living (and salivating) vicariously...and in a GOOD way. Wow! Eiffel Tower sounds like the ultimate, epicurian bomb! I will definitely consider this one...thank you!

I liked Mon Ami Gabi at the Paris Hotel. From some seats you can see the Bellagio fountains. It was moderately priced, and very good french food. I hear Stefano's downtown at the Golden Nugget is good for Italian. Also Batatista's Hole in the Wall on Audrie. In the NY NY restaurant, there's an Il Fornaio (Italian). I just had breakfast there and it was good. I hear lunch and dinner is even better.

I meant "joint" in the most casual, tongue-in-cheek, kinda way. Price is no object...I'm an incorrigable foodophile. Perhaps I should start taking myself a bit more seriously if I want to post a query here.

I would also suggest either of the Andre's restaurants, although I am not sure if they are related. The one @ MC also has a great little hidden cigar bar upstairs. Mon Ami Gabi is also good, but I prefer it for lunch. Nothing like a little croque monsieur for lunch. (That is likely, horribly spelled btw).
