I liked walking through the cheesy mall areas in both the Venetian and Caesars Palace. I like the Chihuly glass flowers at Bellagio. All of those activities are free provided you can stay out of the shops.
I think the best view of Vegas is by helicoptor, especially as it gets dark and you see all the lights.

Strolling on the strip
The Grand Canal and shops at the Venetian
Checking out other casinos: New York-New York and the Mirage for starts
The pirate show at Treasure Island
The fountains at Bellagio
The conservatory at Bellagio (off the hotel lobby)
The Mac King afternoon show at Harrah’s
Watching a lounge show
Also,
Seeing a show (Cirque du Soleil’s O, perhaps)
The Mirage buffet
The Sterling Sunday brunch at Bally’s

I'm with happytrails...the Sterling Brunch at Ballys, albeit very pricey, is really worth it if you like all you can eat caviar, made to order sushi, baby lamb chops, crab legs, and all you can drink champagne.
