DW and I had a ten minute wait for a table at the Moab diner.
The food and ice cream was great.
Make sure you do the hike out to Delicate Arch and at least one other hike of more than 30 minutes.
Also sign up for the ranger led hike at Fiery Furnace.
The scenery at the Island in the Sky section of Canyonlands is nice but I didn't see a hike that I wanted to take there.

Delicate Arch
Double Arch-not to be confused with Double O Arch
Do all the Devils Garden Primitive Trail- will take you about 4-5 hours and is moderate.
The Devils Garden Trail goes past Landscape Arch at about 1 mile, you can turn around or do the entire trail. Don't miss Landscape or Delicate
Turret Arch
Balanced Rock
The Windows
I've been to nearly every National Park in the west. My daughter ranks Arches as her 2nd or 3rd favorite park we've been to. The very best adventure we've experienced in any park was with www.deserthighlights.com Very safe and it isn't that difficult. Totally amazing experience.

I would try to do both parks. I would head out to Landscape arch first as parking can be a problem there then hit the others (windows, turret arch, balanced rock, etc. and if you want to see delicate arch at sunset, do bring a flashlight or two for the trip back.
I would also want to see at least the Island in the Sky district of Canyonlands. Do go out to Mesa arch and also out to the overlook at the end.
Neither park has dining facilities, so stock up on sandwiches and drinks before heading out.
DH thinks the views from Island in the Sky are as good, although different, as Grand Canyon. I have some pictures of both parks at www.flickr.com/photos/emalloy2009 in the 2013 set if you want an idea.

Arches for hiking (Devil's Garden Primitive Trail is the best...Delicate Arch is a must do). Canyonlands (Islands in the Sky) is a driving to the overlooks kind of park...don't miss Mesa Arch.
If you only have one full day, spend it in Arches.
Desert Bistro for high end dining. Sabuku Sushi for a different sushi experience...love it there.

Definitely Arches and if you have time then Canyonlands. Delicate Arch is such a nice hike. Windows is also nice. Heck just driving around either park is nice.
I don't know for sure but I doubt that they're offering Fiery Furnace walks. They weren't when we visited this past February.
We went to Arches two Novembers ago. We had the park practically to ourselves. And there will probably be even fewer people at Canyonlands.

I love both Arches and Canyonlands, BUT if I had to choose just one, then I would choose Arches. The scenic drive into Arches is just amazing. You can look in all directions and see landscape that is breathtaking. There are many great hikes that are moderate. One nice thing about Arches is that it is only 5 miles from Moab so on the day you arrive (as long as it's not dark) or the day you leave you can go in and do a quick hike like Double Arch, the Windows or Park Avenue. Delicate Arch is a three mile round trip and is one of my favorites and as you can see one of the ones most people recommend by others.

Restaurants
Sunset Grill at sunset - no other time.
Fabulous view of Moab.
Very historic restaurant as it was the home of Steen who discovered an almost pure grade of uranium.
This was his home.
For lunch?
Pizza and micro-brew at McStiffs
