Because of a significant difference in flight costs, we decided to change flight dates by adding a couple of days to our upcoming trip. This has created an rather fun dilemma - what to do with those extra days!
We will be spending one week in Kanb, Utah, and 3 nights at the northern rim of the Grand Canyon (avid hikers), flying into and out of Las Vegas. This gives us two extra days enroute to the GC from Vegas, and one extra day between Kanab and Vegas, before heading home. Zion is always a possibility, but we have already been there. Any other suggestions?

Bryce Canyon has plenty of hikes.
Lots of hiking in the national forests as well - there's a cool hike I did (partway) that starts in a national forest and ends at the bottom of Cedar Breaks National Monument. Look at the national forest page for ideas if you want something other than the national parks.
Wow, thanks! Some really helpful suggestions. We have been to Bryce Canyon, Lee Ann and Where, though both Bryce and Zion would be worth a repeat. I'm liking the national forest and boat ideas especially. I'll get out my atlas and guides and look up the areas you recommend. I haven't heard of Goblin Valley, Tom. I'm curious!

I went there with the purpose of finding 2 geocaches.
I found some dinosaur tracks north of Moab that I never would have seen without my hand held GPSr.
I've now been geocaching for 7 years.
We thought about it at one point, but we'd probably become hopelessly lost as we're electronically challenged.
