South Australia in 2 weeks

We are planning to spend about 2 weeks in South Australia over Easter 2017. We love beautiful scenery, wildlife, hiking, good coffee, and will include a couple of wineries on our trip. Generally, we don't do much in the way of organised activities, but are open to exceptional activities.
As a general rule, we like to self cater, and try to stay in a few bases and travel out from there.
We are thinking of something like this: Adelaide 2 nights; Kangaroo Island 4 nights (suggested location to choose?); Port Lincoln area 3 nights (will cross by ferry from Wallaroo, suggested area to stay?), Barossa / Clare valleys 3 nights (perhaps a location where we could appreciated both areas from), McLaren Vale 3 nights.
I would be interested to hear what people suggest. Too rushed? Too long anywhere? Any alternative ideas will be most appreciated. Thanks.

We stayed in a self catering cabin at Hanson Bay on Kangaroo Island. It's close to Flinders Chase National Park and they also have their own wildlife sanctuary.

We really enjoyed SA in our two visits from WA.

These are a bit dated, but you might get some ideas from my SA trip reports.

For what it's worth, we much preferred Barossa and Clare to McLaren Vale. McLaren Vale is so close to Adelaide, that it tends to be more crowded and felt more like a trip to the 'burbs than an escape to quiet wine country. To us anyway.

I'd also suggest staying in the Adelaide Hills vs staying right in Adelaide - some beautiful areas there, more great wineries and beautiful countryside.

Ahh the Barossa.....I love it there (and I live in the west which is know for its wineries).

We were in the McLaren last year while driving Adelaide to Melbourne, via the Great Ocean Road and it was a little disappointing. I would highly recommend the Barossa over the McLaren. We stayed at the Barossa Pavillons about 7 years ago and we still talk about the trip. Make sure you visit Handorf too. We spent 4 days just driving around all the little towns and visiting wineries.

You may wish to add an extra night to Adelaide if you can as I assume with 2 nights you only get 2 full day. The city is nice and the zoo is even better. You can also head out to Glenelg. I am always reading about the new restaurants in Adelaide and it seems to have become a bit of a foodie place, so well worth exploring.

Victor Harbour is nice for day trip too.

My in laws were in Kangaroo Island last year and they really enjoyed it. Lots of beautiful scenery and all about nature.
