Central America travel over New Year's

A friend and I are thinking of going to central america for the week of New Year's. We're looking for a more cultural / outdoorsy vs. beach / drinking experience. Any suggestions?

I think any place can be cultural/outdoorsy not about beach/drinking. It's more about what you choose to do once you arrive not the specific destination you pick.

I'm personally most familiar with Mexico but I think every Central American country offers what you seek. Costa Rica? Belize? Guatemala?

I'd head to either Nicaragua or Guatemala.

My photos with blog, travelogue, and review links on the main page of each collection are below in case you're interested - all my recommendations are embedded there - maybe some ideas for you. Happy trails!
