Travel with connecting flights

We will be heading to Rome from Newark with a stop in Toronto for a few hours on Air Canada. I will check my luggage through to Rome. Do I have to go through immigration. What do we have to do go though in Toronto. We are new to this.
Also flying from Rome to Munich for a stop and then onto Newark. What happens in Munich? When do you go through customs? I have read to check luggage through to last stop as this is one ticket.

Customs is in Newark on the return; US immigration as well.

In Munich you will go through passport control for a Schengen out stamp. There is no customs as you do not collect your bag in Munich. Customs is a declaration of goods and in Europe it's a matter of going through a door marked "nothing to declare."

You're not stopping in Toronto on the return flight?

You should not have to go through Customs in Toronto.

If you are flying non-stop from Milan home to Newark, your gateway into the US is Newark where you go through immigration and customs. If you are flying home through Toronto you probably will do US immigration in that airport.

Southam, you didn't answer the question.

You will check baggage to Newark in Rome. You will transit air-side (no clearing customs, no exiting security) in Munich.
