Time in Strasbourg?

I'm not a rushed traveler. I'm more what the French call a flâneur, someone who likes to wander and stroll and enjoy himself at leisure. I like churches, museums, scenic views, cafes, good long meals with local wines.

I'm trying to figure out how much time would be enough to see Strasbourg. Not anyplace outside, not the wine trail or picturesque villages, just the central city itself, the Cathedral, La Petite France, etc. Do people who know the city and understand the kind of low-stress vacation I'm looking for have suggestions? Four days? Five days? A full week?

And does anyone have experience with the Hotel Gutenberg there? The Tripadvisor reviews are encouraging.

We travel at a similar pace and spent 4 nights there during xmas season in 2008. Had a great time. I think after that I would need to do some day trips etc.

I've been to Strasbourg several times, for about 4 days at a time, and found plenty to see and do in that amount of time. But I've also gone all over the area between Strasbourg and Colmar a few times and thoroughly enjoyed the smaller towns as well.

We will be staying at the Hotel Gutenberg the end of July for 2 nights. When will you be going? I'll be happy to post a review when we get back if that would help.
