You are correct -most of the stores are closed on Sundays. The town is nice to jsut stroll around in, but it is composed primarily of shopping. It is not the place for historic sights, museums, etc. Ther are several church that merit a quick look see, and certainly there are some good views over the harbor and from jsut outside of "downtown". You could spend a couple of hours doing this, plus add in some time for lunch or coffee, but even that would be maybe half a day. You could combine Sorrento with Pompeii or Herculaneum (if you are not already planning to visit those palces).

asked our driver Marcello the same question about the shops in Sorrento being closed on Sunday, as we too are arriving on a Sunday. He said "Sorrento, Positano & Capri are very famous tourist resorts, so almost all the shops will be open all day long, even on Sunday...".

I asked as I was thinking of what to don upon our arrival.
