According to your prior posts, you speak (or write) English. Perhaps you'll get more responses if you do so again.

Según sus actividades anteriores, usted habla (o escribe) Inglés. Tal vez usted obtendrá respuestas más si lo hace otra vez.

Hi everybody!
I am planning a trip to the northern area of Spain without rushing and visiting mainly small towns, being in contact with nature, history and beaches. We will rent a car.
We will start our itinerary in San Sebastian flying from London and finishing in Santiago de Compostela.
The itinerary up to now is as follows. We have 15 days.
San Sebastian 3 N
Santillana 2 N visiting Bilbao
Cangas de Onis 2 N
Cudilllero 2 N
Santiago de Compostela 2 or 3N
Rias Baixas
I will be grateful with your suggestions.

There is a nice waterfront parador in Baiona, Rias Baixas. I like the list of places you're planning to visit with the exception of Santillana del Mar as it was over run with tourists when we were there.. Also. Consider adding Ribadesella on the coast.

Thanks HappyTrvlr. Where can I stop instead of Santillana before going to Cangas?

What month are you doing this?

I would probably add a day in San Sebastian. Also consider Oviedo. If you stay 4 nights in Santiago you could do a day trip to La Coruña and to Finisterre.

If you are into staying in Paradors, which are always a good deal, then you can stay at the Parador in Monforte de Lemos to use as a base for touring the Rias Baixas. We stayed there at the end of last November for a few nights on our second trip into the Rias Baixas.

I would recommend the Parador Santo Estevo de Rivas de Sil, but it's more of a retreat than a good base for wine touring, but it's close enough. It always a good bargain, depending on the time of year.

If budget is not an issue, then there is a nice place located just outside of the village of Sober, south of Monforte, the Palacio de Sober (www.palaciodesober.es). It's without a doubt the nicest palace in the region. We came away very impressed.

You might also be interesting in reading "Chestnuts, Celts and the Camino", which covers this area quite nicely.

For exploring the Rias Altas, you can check out the Parador de Ferrol, or the Parador de Vilalba.

Living in The Ribeirasacra where Monforte de Lemos is located in I would certainly never recommend staying there and visiting the Rias Baixas It will cost around 1.75 or 2.5 hours travelling each way so double that per day.
Ribeira Sacra is a wine area of it's own standing.
The Parador at Santo Estevo has been over restored. In fact i could not even say it has been restored. It has the better location of the 2 Pardores in The Ribeirasacra but some rooms over look the sewage works.
The Palacio de Sober is rated at 5 stars and in recent years seems to have trouble with maintaining the 5 star service.

I would ensure you plan this trip with more than 2 nights stay in Rias Altas and The Rias Baixas. The latter can be done as day trips from Santiago de Compostela.
Santillana and area could be cut out or reduced to an over night, normally I do not like to say that, but you can visit it on your way between San Seb and Cangas de Onis.

Thanks for your sugestion Ribeirasacra. I will stay 4 Nights in Santiago and perhaps 3 Nights in La Toja.
We love long stayings with no hurry because generally we don't come back to the same cities with some exceptions of course.

If you only come to Galicia once then Santiago is perhaps the place to base yourself. You can get to the Rias Altas and The Rias Baixas plus A Coruna and maybe Lugo too. I have to say I find it too touristy, but it has to be done.
