Hi
I am also trying to purchase train tickets from Metz to Paris. I didn't book hotel yet so I am not sure where exactly i am going to be staying in Paris, but I would like to book hotel in single digit
arrondissements. Can you advise me what is the name of train station in Paris I should use when i buying tickets. It seems to be more then one and I am completely confused.
Thanks

Awkwardly, Metz Centre is not in the centre of the city. Google Maps shows it to be about two kilometres from the heart of the old city, a decent walk in daytime but worth a taxi at night. A number of hotels cluster around the station, and the new branch of the Pompidou Paris art museum is nearby. http://www.centrepompidou-metz.fr/en/welcome
Metz has a long and varied history, worth a full day visit. Wikipedia's page describes the attractions and attaches a formidable list of web links. The restaurants and pubs will feed you Lorraine cuisine and Belgian-German style beers.
The station itself is considered architecturally significant, including its sturdy clock tower. It looks German because that’s who built it, after conquering the city in the Franco-Prussian war.

Metz Centre, which as noted isn't exactly in the center.
For the return to Paris, you don't have a choice of stations. Trains coming from direction X arrive in station X. Just put in Paris (toutes gares intramuros) on the SNCF form and it will automatically show you which station you'll end up at, in your case the Gare de l'Est.
I hope you're not using Rail Europe.
