Help me with the last 6 nights...Luxembourg, Trier, Cologne?

Help me with the last 6 nights...Luxembourg, Trier, Cologne?
After leaving Reims we will have 6 nights before our flight home from Dusseldorf. We are thinking the last night we will probably just stay at an airport hotel, due to flight time.
But I'm stuck on where to spend 5 nights covering the above places and/or any of your suggestions. We feel we should at least 'visit' Luxembourg and Cologne but maybe just day visits? Does anyone have thoughts on a great village where we could base for either all 5 nights or split the time? We are all about scenery, gentle hikes, national parks, local food and wine. Not so much cities as such to base in, hence my hesitance for basing in Luxembourg or Cologne......unless I'm completely off the mark and you would suggest these two places. As for Trier my dh 'discovered' it recently and wants to go there.

Trier is OK, good for Roman history but not so much for these other things, and probably more of a city than you'd want. Look into Cochem, half way between Trier and Koblenz. You can easily day trip to Trier from there... Plenty of easy hiking and biking in this area of the Mosel River from one wine town to the next.

Yes, Cochem is lovely. Didn't make it to Trier. Cochem is near the beautiful Burg Eltz castle (you can hike up to it from Moselkern, a few train stops from Cochem).
Luxembourg the country is beautiful, with a few charming little towns like Vianden. Luxembourg City itself wasn't my favorite city - not a bad place at all, just not particularly charming or appealing. it's one of those places that sounds more interesting and appealing when you read about it than it turns out to be.

Koln was OK for the cathedral but not our favorite place.
We loved Trier, but are major history buffs, and were fascinated with all of the Roman remains (unique north of the Alps) juxtaposed with the charming German town surrounding them. Thought it would just be a base to explore surrounding areas but happily spent 2 full days there.
Saw Luxembourg City on the way and it was fine, would rate a 7 or so versus a surprising 9 for Trier.
