We had a quick overnight in Reims at the lovely Holiday Inn Express. It is right off the highway and easy to get to. Not very much charm but serviceable. Free parking also. Reims and Epernay have many tours of champagne houses not vinyards. There are free maps everywhere and they are easy to find. Most are very fun. In Reims we went to the Tattinger cellars. When all of the tour guides called in sick, one of the Tattingers came out and led the tour.

You could do without a car in Reims itself, but to do it along with Epernay and the wineries it is almost a necessity.
We've stayed at the Royal Champagne, right outside of Epernay and they arranged a tour for us. A lovely hotel with marvelous food and an excellent cellar.

Travelman_13: If you stay in Reims, there are many champagne tasting houses right in town. A car is not necessary. For accommodations, if you want a splurge, the incredible Les Crayères is a wonderful experience. Their restaurant is still exceptional, notwithstanding the retirement of Gérard Boyer.
