Bursting onto the burgeoning dining scene in Salt Lake, Pago more than lives up to its promise of farm-to-table freshness in a microscopic neighborhood bistro, albeit with big-city ambition and tastes. The chef-driven restaurant capitalizes on local artisan farmers, with big and small plates anchored around simple ingredients like radishes, beets, or mountain stream trout. There's plenty to satisfy big appetities too, such as rack of lamb and rib eye, or gnocchi for vegetarians. Pago has an excellent wine list and attentive service.
