The mellowest of longtime Brooklyn chef Saul Bolton’s several restaurants in the borough, the Vanderbilt offers a broad menu in a large space. Comfort food like meatballs, chicken, and pork chops are joined by creative small plates, a charcuterie menu, a well-chosen craft-beer menu, cocktails, and brunch specialties (including delicious shrimp and grits). For a higher-end experience, Bolton’s The Norm (closed Monday and Tuesday) is in the Brooklyn Museum. Locals agree the menu there became less exceptional after a transfer from Cobble Hill, but the presentation is polished.

In Las Vegas nothing succeeds like success, so it was no surprise when Caesars International announced a sister for the wildly successful Vanderpump Cocktail Garden at Caesars Palace. Lisa Vanderpump's spot at Paris Las Vegas has somewhat more of an emphasis on food, with dishes like caviar bites, a trio of tartares, the truffle stuffed Vanderpump baguette, coq au vin pot pie, bourguignon pot pie, and a cast-iron filet with pink (of course!) peppercorn reduction. The desserts may carry the heaviest French accent, with creme brulee beignets and mousse au chocolat bites. Cocktails include shots, spritzes, and all the classics, and Vanderpump signatures like "Pump & Circumstance" (a pear and ginger mule) and "Pinky’s Poison" (a hibiscus gin and tonic).

On a hot summer day and even on not-so-hot days, locals yearn for some Varly's ice cream, or if the weather's cold and rainy, for some decent pizza. The owners (who also manage Varly's Swiftwater Seafood Café) take great pride in what they do, and it shows: the homemade pizza here is certainly something to write home about.
