At this impressive location in a unique setting of Botticino marble that's part of a century-old building lobby, the sushi stalwart is as bustling and taste bud–tantalizing as ever, serving the innovative Japanese cuisine that namesake master chef Nobu Matsuhisa made famous (though he's rarely in attendance these days). Dishes like fresh yellowtail sashimi with jalapeño, rock shrimp tempura, or miso-marinated Chilean sea bass continue to draw huge crowds. Put yourself in the hands of the chef by ordering the tasting menu, or omakase, and specify how much you want to spend, then let the kitchen do the rest.
