Loyalists pine for chicken or pork sliders, halibut crudo, and pupusas (corn tortillas stuffed with cheese and pork or vegetables), a prelude to entrées like fish tacos with chili-yogurt sauce and Caribbean-style paella suffused with smoky-garlicky tomato broth.
