Set back from Shediac's main thoroughfare, this elegant and stately historic mansion is now an upscale boutique hotel with a fine restaurant. Large rooms are decorated in serene color schemes and have fireplaces, canopy beds, and giant tubs or Jacuzzis and multijet showers. Those at the front have a view of the Northumberland Strait, as do the cozy upstairs sitting area and porch. In the restaurant, the chef, latterly of the Fairmont Hotel in Bermuda, brings some Caribbean influences to dishes such as Seafood Cioppino. The Lobster Wine Dinners here, a feature of the town's Lobster Festival, are legendary.
