The dough here is kept in a tufa-stone area, allowing the restaurant to claim it is "geothermal." The slightly upmarket pizza is served on tables, which are set with majolica tiling unearthed during the excavation of the historic San Paolo convent, which was once located on the same corner as the restaurant, thus bolstering the sense of authenticity.
