A restaurant in a chain hotel might seem like the antithesis of Provence, but award-winning Chef Jean-Marc Banzo makes dining at the Renaissance Aix-en-Provence a memorable experience. Grilled scallops with caramelized chicory make a good starter, perhaps followed by roasted veal with rosemary. To finish off there's shortbread with lemon thyme, citrus cream, crispy meringue, and sorbet with herbs. If you want to try a little of everything, go for the €90 or €130 fixed menus. The streamlined dining is chic but subdued.
