Located on a noisy road near the port and nothing special from the outside, Amfora is the best restaurant in Dubrovnik and one of the best in the country. Dishes burst with flavor from herbs grown right on the premises, the fresh produce comes straight from the market across the road, the fish and meat are locally sourced, and the sesame-encrusted bluefin tuna steak will change your life. Owner Kristian studied medicine before opening the restaurant and has transferred his love of research and interest in fresh and healthy eating to his menu. Treat yourself to dinner and a bottle from the excellent wine list; this is a restaurant that's actually worth the price.

Run by the same wonderful family who owns Boutique Pine Tree Apartments, Ante's Place, with its breezy terrace right on the water, is so good you'll likely eat all of your meals there. It's the best place to taste all of the traditional Dalmatian dishes you've been wanting to try, from peka to octopus salad to seafood platters. They'll tell you that the food they cook is just the typical grub they eat at home, but you won't find local dishes this delicious elsewhere, and if they eat this well at home every night, we're moving in.

Spread over two shady terraces high up in the Old Town, just beneath the City Walls near Buža Bar, Azur is a great place to escape the crowds with a leisurely lunch of internationally inspired dishes that burst with flavor. The menu changes regularly but favorites include pork belly tacos and Szechuan chili garlic prawns. Azur has a hip soundtrack, friendly staff, and dishes that you won't find elsewhere in Dubrovnik.

Occupying a 14th-century salt warehouse, Bota (part of the Šare family empire) is known for its menu of outstanding, locally caught seafood—it's the best place to try Ston's famous oysters. If raw oysters make you squeamish, try the pohane oštrige (oysters deep-fried in bread crumbs), and don't leave without trying the unusual stonski makaruli, a cake made from pasta, nuts, sugar, and cinnamon, unique to Ston. You can also arrange an oyster tasting by boat, where the waiters will pull the oysters right out of the water and crack them open in front of you.

For the ultimate exclusive island dining experience, head to BOWA, nestled on its own secluded beach on Šipan. With raised cabanas right over the water that can be booked for groups of up to 12 (with a minimum spend), it is an ideal place to spend the day swimming and sunbathing between courses. The menu changes regularly but favorites include bluefish tuna tartare, swordfish sashimi, oysters from Ston, and carob cake made with ingredients straight from their garden. BOWA can be reached by speedboat from Dubrovnik or a 15-mintue walk from the port of Suđurađ.

This eatery is vibrant in every sense, from the flowers climbing the sides of the terrace to the happy patrons tucking into dishes that wouldn't be out of place on the menu of a fine dining restaurant in Dubrovnik. The menu changes regularly but you can expect lobster, octopus, pork belly, and other local ingredients prepared in fresh and exciting ways. Find it in Cavtat's old port, one of several restaurants squeezed together along the promenade, but head-and-shoulders above the rest.

Head to the hills around Žrnovo to a tiny stone konoba, rustically strung with lavender and bouquets of elderflower, where the Marović family has set up a tasting room where you can try homemade liqueurs, marmalades, and award-winning olive oil. Call ahead to book a tasting or lunch which might include platters of grilled vegetables pulled from their garden, charcuterie, traditional Korčula macaroni, and homemade ice cream. Always seasonal, local, and homemade, you’ll be thrilled with whatever your meal turns out to be.

When the former pastry chef at Restaurant 360 opens his own artisanal ice cream and cake shop in Dubrovnik, you know it's going to be good. Gianni serves up hands-down the best ice cream in the city, incorporating natural ingredients and some unusual flavors such as curry and chili, alongside traditional favorites like pistachio and chocolate. Don't let the high-caliber credentials intimidate you; this little hole in the wall, located behind the old port, is sophisticated yet simple and you'll probably find yourself seeking it out more than once during your stay.

Plan to relax for a couple of hours at this old stone home in the village of Žrnovo over a glass of wine and a platter of authentic, delicious food; try grilled seafood or traditional Žrnovski makaruni (fresh handmade pasta). Call ahead to arrange a short walking tour of the village and a sweet lesson on how to roll macaroni with the patriarch of the family.

In the courtyard of an old stone cottage in the tiny village of Pupnat (34 km [21 miles] west of Korčula Town), this welcoming restaurant is a firm favorite serving gourmet fare prepared from the family's own farm. The menu changes seasonally, but look out for the house specialty; a platter of homemade pršut (prosciutto), goat's cheese, olives, and eggplant pâté, in which the owner says you can see their entire history.

With comfy seats scattered around the shady garden of Croatian-American Maxo Vanka's memorial art gallery, a jazzy soundtrack, and an unrivaled view of Korčula Town ahead, Maksimilijan Garden is a lovely place to relax at the end of a hot afternoon. The menu features grilled meats, steaks, risotto, and a fabulous cocktail menu. Come for a meal, or just sip a drink while you watch the sunset over the Old Town.

A local favorite, a little off the beaten track but worth the trek, Pantarul is a fun bistro with a uniquely Dubrovnik feel—even the name means "fork" in local dialect. A love of traditional dishes comes through here; the menu changes weekly but there are a few mainstays like sea bream, foie gras, and super tender ox cheek. You’ll see the artistic sensibility of co-owner Ana-Marija Bujić, a successful food blogger, throughout the restaurant, from its fresh design to the stacks of cookbooks in the corner.

Located right in the heart of the Old Town, longstanding Dubrovnik institution Proto dates back to 1886 and most locals will respectfully acknowledge that it's still one of the best in town. It has hosted everyone from King Edward VIII and Wallis Simpson to modern-day celebs and sports figures who come to try its menu of reliably prepared traditional Dalmatian dishes using simple local ingredients and premium local seafood such as lobster and shrimp. Opt for the five-course tasting menu, which includes the catch of the day, or choose from the à la carte menu; the seafood platter for two is an excellent choice.

Michelin-starred Restaurant 360 offers an impeccable fine dining experience, from the unbeatably romantic view overlooking the old port to the friendly, unpretentious service. The extraordinary food will surprise and delight you with its sophistication and simplicity in equal measures, and the five-course tasting menu is worth the splurge; settle in for a few hours and enjoy the ride. Occupying St. John's fortress and a portion of the City Walls, 360 is known for its panoramic outdoor terrace, but the interior is also a beautiful setting woven into the crevices of the historical ramparts.

Follow the scent of fresh basil—Chef Maja's favorite herb—to Aterina, a playful restaurant occupying a square on the periphery of the Old Town, with views to the palm-lined promenade and sea below. Making use of great local produce, it offers a refreshing change from typically heavy Dalmatian dishes with a lighter take on local favorites. Order the "small plate" to try a sample of each of the tapas-style starters including cheese, smoked ham, anchovies, and marinated vegetables. Don't leave without trying one of the wonderful fresh desserts like basil cake and peaches in Grk.

Tucked away on a small terrace near the cathedral, Bota Šare takes the best local produce and turns it into beautifully presented sushi, sashimi, carpaccio, and tartare. This is also a great place to try oysters from the nearby town of Ston; it's safe to say the Šare family, who also runs one of the best restaurants in Mali Ston, does them best.

One of the pleasures of staying at Pucić Palace is having breakfast at their adjoining restaurant, Café Royal that's thankfully open to the public as well. A classy and cool café with an art-splashed interior and large terrace on Gundulić Square, it offers the best breakfast in Dubrovnik, with scrumptious options like Caprese salad with burrata and eggs benedict with truffle, or lighter options like coffee and cake. Lunch and dinner are excellent as well, but breakfast is the five-star choice here.

It's getting harder and harder to find quality ice cream in Southern Dalmatia, so you'll be relieved to find Croccantino, a fun, colorful little café on the waterfront promenade in Orebić. It serves exquisite homemade gelato, artisan cakes, and cupcakes, as well as excellent smoothies, coffee, and milkshakes. If you must wait to board the ferry to Korčula, leave your car in the queue and walk over to Croccantino for a treat, where you can keep an eye on the port from a seat on the shady terrace.

The epitome of a hidden gem, there is no menu or prices at Estravaganca, just a chalkboard with the catch of the day, and the owner who will rush out to grab your boat ropes, show you to your table, bring out the fish for you to choose from, then light the fire, and grill it right in front of you. Most days there are mussels and oysters kept in the sea and pulled out just minutes before they're put on your plate; same goes for the lobster, which is then cooked in a spicy red sauce with homemade pasta. Try the grilled wild deep sea fish such as flounder, monkfish, or amberjack, which are filleted and barbecued to perfection. You can get there by car, but the best way to arrive is by boat.

Occuping the ornate Arsenal building right on Luža Square, Gradska Kavana remains Dubrovnik's favorite meeting place for morning coffee and cake or an evening aperitif. The grand café has an ample summer terrace and is a perfect spot for people-watching and admiring the sites that surround it, including Rector's Palace, Sponza Palace, and the cathedral. City Hall is located just upstairs so you'll often see news cameras and journalists outside waiting for politicians to emerge, and local TV segments being filmed nearby.
