The service is warm, the champagne is properly chilled, and the splendid Pacific Rim–Mediterranean fusion fare seems designed to complement the admirable, 8,000-bottle wine cellar rather than the other way around. Chef Steve Smith, a CIA grad and registered dietitian, has introduced heart-healthier options such as curry-scented pumpkin soup and whole-wheat-flour–and–black-bean brownies. Nonetheless, the menu also includes such indulgences as foie gras steeped in aged rum and candied cherries or baked Camembert. Happy hour, 11 pm–midnight, often ushers in impromptu dancing, continuing the "Bali high" theme. The downstairs "Coco Beach" has an infinity pool for use, sensational St. Kitts views, affordable, creative, lighter daytime fare when open for lunch (call ahead), and live music many evenings.

But the kitchen also stays home in proper locavore fashion, as does the bar, sourcing as much local produce as possible from Kittitian farmers and fishermen (who might troop through the restaurant with 30 just-caught snapper). Spice Mill merrily marries those gastronomic traditions, juxtaposing colors, tastes, and textures right from the dips served with scrumptious homemade breads. Panko-crusted crab cakes and seafood risotto are popular offerings. The culinary globe-trotting approach also dictates the decor—a mix of regional (coconut-wood-top bar, Carib canoe, and crayfish baskets from Dominica) and cosmopolitan (white beach beds, cushioned couches) elements, making even the bar (open daily and serving light snacks) a barefoot-chic hangout. Lunch is considerably cheaper and more island-flavored.

    Imagine a semi-alfresco cathedral constructed of raw limestone coral overlooking a palm-fringed sandy crescent: that's The Pavilion, the ritzy Christophe Harbour beach club open to nonmembers for dinner only. The soaring interior blends colonial and contemporary with aplomb: a curved exhibition kitchen, streamlined bar stools, and abstract pendant lamps contrast with "found" sculptural sea fans and driftwood, antique settees, and 19th-century black-and-white photos of Kittitian scenes. Executive Chef Damien Heaney similarly blends tradition and innovation. Even such "traditional" fare as conch fritters is goosed with pickled ginger and passion-fruit coulis and artfully presented with swirls of jerk mayo. Heaney’s dishes provide textbook examples of how to juxtapose textures, flavors, even colors. Wednesday night's Chef's Appreciation prix fixe is a fine buy. The wine list features some surprising bargains, especially among whites, and you can finish your meal in style with one of a dozen aged rums.

    Peripatetic English owner Gillian Smith has held jobs with Disney and Relais & Châteaux, and everything about Bananas borrows from her wildly diverse experiences. Even the setting is delightfully deceptive: the classic stone, brick, and wood plantation great house nestled amid extravagant gardens was painstakingly built by Gillian herself in 2006. Her fun, shabby-chic sensibility informs every aspect of the restaurant and adjacent art gallery in a faux chattel house. The colonial look (pith helmets, steamer trunks, beamed ceiling, chandeliers dangling from a corrugated tin roof) contrasts with Turkish kilims and Moroccan lamps. The food is equally eclectic and globe-trotting, running from bourbon-glazed guava ribs to baked gnocchi. Despite the improvisational ambience, there's no monkeying around with quality at Bananas.

More casual lunches take full advantage of the beachfront setting, with white tents and hedonistic beach beds. But nighttime is truly spectacular, as outdoor fiber-optic fountains enhance the visual flair of the vast, sleek-but-not-slick interior replete with eat-in wine cellar and tile-and-layered-wood sushi bar. Starters include the original maki rolls. Seafood such as breaded grouper in orange beurre blanc is masterfully executed; nothing at Carambola is overcooked. The sole letdown is the wine list. Although it's the island's largest, it lacks imagination; however, the by-the-glass selections are at least reasonably priced, and there are a few prizes.

The overgrown shack is plastered with sailing and fishing pictures, Balinese masks, fishnets, license plates, and wind chimes. Behind the cool mauve bar is a gleaming modern kitchen where Mark (and fun-loving firebrand partner Lyndeta) prepare sublime seafood he often catches himself (try the ginger garlic shrimp), as well as organic beef burgers, velvety pumpkin soup, inventive pastas, lip-smacking ribs, and some British pub standards. Stop by for free Wi-Fi and proper espresso, a game of pool, riotous karaoke on Thursdays, or Sunday bingo.

No surprise you'll find politicians and expats grabbing a quick lunch (it's a terrific place to eavesdrop on local gossip) alongside local workers shyly bantering with the waitresses. With just a few genre paintings for atmosphere, the decor is basic. The draw is the traditional stewed oxtail, curry goat, or swordfish creole served with heaping helpings of fungi (cornmeal), rice and peas, and dumplings. Join the locals for bounteous dishes that they swear will cure—or at least absorb—any hangover.

You could feast on appetizers alone, but opt for the bargain three-course prix-fixe. Even the old-fashioned veggie dishes are a delight. Save room for dessert. A few minor complaints include: mosquitoes on still nights, limited wine selection, and the occasional overcooked if tasty entrée.
