At arguably one of the island's best and most romantic dining spots, Chef Vincent Binet changes the way he hones tasty fish, chicken, shrimp, and meat every two weeks. The venue is small, modern, and minimalist, with white walls, contemporary art, Frank Lloyd Wright–styled chairs, and dinnerware that resembles warped squares—certainly not what one would expect to find in a Dominican restaurant. Expect impeccable service and special touches like a timer for brewing tea. But the real star is the food. Main courses like roast saddle of lamb in garlic sauce are so tender they practically melt in your mouth. Though the wine list is not extensive, it samples grapes from all over the globe.
