Just past Springfield on the way to Pont Casse, you'll begin to see hills full of flowers. At a big bend, a sign on a tree reads "Miranda's Corner," referring to a bar, rum shop, and diner all in one. Here Miranda Alfred is at home, serving everyone from Italian tourists to banana farmers. Many of her ingredients are grown in her adjacent garden. The specialties are numerous, including tropical juices and titiree, fish balls made from a fish of the same name, which are served only in season. All the dishes are prepared with a potion of passion and a fistful of flavor. Miranda's is open for breakfast, lunch, and dinner and is a great pit stop if you are in the area; call ahead to make sure it's open.

Stone walls, lots of plants, and red accents make this restaurant near the waterfront a very cozy place. The menu offers tasty chicken, pork, and seafood, and local dishes like coconut battered fish are very good. The Old Stone's owner, Leonard Lewis, says they serve the biggest selection of specialty drinks on the island; many are made with fresh fruit. The very friendly waitstaff only enhances the experience.

Located in downtown Roseau, chef Pearl, with her robust and infectious character, prepares some of the island's best local cuisine, such as callaloo soup, fresh fish, and rabbit. Her menu changes daily, but she offers such local delicacies as souse (pickled pigs' feet), blood pudding, and rotis. When sitting down, ask for a table on the open-air gallery that overlooks Roseau. Servings are large here, but make sure you leave space for dessert. If you're on the go, enjoy a quick meal from the daily, varied menu at the back of the building on Hanover Street. You're spoiled for choice when it comes to the fresh fruit juices.

Dine at an altitude cool enough to demand a throw blanket and warm enough to inspire after-dinner conversation. First, try a strong rum punch while lounging in a hot mineral bath in the Papillote Wilderness Retreat gardens. The menu has expanded but still offers the bracing callaloo soup, dasheen puffs, fish "rain forest" (marinated with papaya and wrapped in banana leaves), or other creole-style delicacies. This handsome Caribbean restaurant has quite possibly one of the best views in the region.

This former garage has become the only true grill on the island. It boasts "cool drinks, great food." The menu includes prime steaks, pasta, and seafood as well as creole food and jerk chicken. The bar stools here are anchored by old tires, and a selection of vittles like the 4x4 (ribs) and 6 Cylinders (spicy chicken wings) also recall the space's former incarnation. In early evening, it is a very happening place with the locals. Breakfast, lunch, and dinner are served.

The setting, whether you sit out on the covered, open-air patio or inside the comfortable beamed-ceiling dining room, is sublime, and the food is delicious and healthful. The chef is happy to accommodate any special dietary requests, including vegan, vegetarian, and gluten-free dishes. Expect a variety of entrées from roasted duck and lobster tail to curried goat (local style) and coconut-curried seasonal vegetables. Many ingredients are grown in Rosalie Bay's own organic garden or sourced locally from farmers and fishermen.

At arguably one of the island's best and most romantic dining spots, Chef Vincent Binet changes the way he hones tasty fish, chicken, shrimp, and meat every two weeks. The venue is small, modern, and minimalist, with white walls, contemporary art, Frank Lloyd Wright–styled chairs, and dinnerware that resembles warped squares—certainly not what one would expect to find in a Dominican restaurant. Expect impeccable service and special touches like a timer for brewing tea. But the real star is the food. Main courses like roast saddle of lamb in garlic sauce are so tender they practically melt in your mouth. Though the wine list is not extensive, it samples grapes from all over the globe.

Local favorites are callaloo soup, titiree (fish balls made from a type of fish called titiree), creole-style wings, vegetarian items, and crab backs and river crayfish when in season. The restaurant makes its own delicious mango chutney and plantain chips, called Irie Itals, which you can buy in local shops.

Chef Vincent Binet's fare is constantly changing. You may find duck with a wine and ginger reduction, a marlin and mussels fricassee, or a rib-eye steak. The bistro also offers a simple lunch menu that includes steak frites, salads, and sandwiches.

Just across from the water sits a cottage that has been converted into a small bistro that's as lovely inside as it is on the patio. Dark woods decorate the interior; above the small bar is a portrait of Johnny Depp as Jack Sparrow in Pirates of the Caribbean. The menu features a mix of Peruvian, Japanese, Italian and international dishes as well as the more usual steaks, fish, and pork entrées. All are tastefully presented. Tao is the only place in Roseau that serves sushi—it's not quite traditional, but it is delicious.
