Considered one of the city's best (and most expensive) restaurants, Peshwari entices with melt-in-your-mouth, exquisitely spiced and marinated kebabs and other northwest frontier foods. The dining area has an outdoorsy, dhaba look—wood beams, shining copper platters, and pots hang on the walls and seating is at log tables matched with stools. Other menu highlights include paneer tikka, chicken makhani, and the dal bukhara, served with an assortment of rotis and naans. Part of ITC, a luxury hotel chain known for its excellent cuisine, Peshawri has branches in other cities in India.

Once the maharaja's throne room, this grand hall has a soaring, frescoed ceiling, tapestry-covered walls, carvings, gold-plated silverware, and a staff eager to elaborate on the history and decoration as well as the menu. It is easily one of India's most elegant restaurants. Service is impeccable. The specialties are cuisines from the royal kitchens of Hyderabad, Punjab, Awadh, and, of course, Rajasthan; try murgh tikka zaffrani (chicken marinated in yogurt and saffron and cooked in a tandoor) and dahi ka mass (lamb cooked in a yogurt-base curry) or sikandari raan (leg of lamb) and the Awadhi gilawat. The Hyderabadi biryani is also divine. A good vegetarian choice is papad ki sabzi (vegetables cooked in gravy). For dessert try soft and creamy ras malai (milk dumplings in a milk syrup).

Named after the year when Udaipur was founded, 1559 occupies an elegant colonial bungalow, with the option of dining alfresco in the large garden. Specialties include Rajasthani game birds (farmed, not hunted), prepared in traditional Indian and European styles, as well as salmon, rack of lamb, and baby back ribs. Vegetarian specials are malai kofta and paneer dishes. They also do pastas and pizzas. There's a café with an authentic espresso machine and a bar with a decent selection of wines. Last order is 10.30.

Run by an eccentric Indo-Australian and his wife Rama Bhatia, this second-floor vegetarian restaurant serves simple snacks, pizzas, vegetable dishes, waffles, and wonderful coffee milk shakes throughout the day—the ice cream and freshly baked bread is made on the premises, from scratch. Indian dishes on the menu include egg curry and pav bhaji (vegetable curry with bread), a popular street-food snack served throughout Maharashtra and Mumbai. Homesick Brits and Australians should note that Marmite and Vegemite can be purchased here. The restaurant is just inside the fort, up a staircase, and has beautiful views of Jaisalmer's Old Palace opposite.

Right on the shore of Lake Pichola opposite Lal Ghat, this lively outdoor restaurant with a pleasant bar has a hidden approach via narrow lanes and stunning views of the City Palace complex and the Lake Palace. It serves Rajasthani standards such as paneer do piaza (soft white cheese in an onion gravy), laal maas (spiced mutton), and mutton rajputana (spicy, Mewari-style) along with decent Continental and Chinese dishes. If you're here at dinner, ask that a mosquito repellant coil is placed under your table.

The café attached to the Anokhi store, at C Scheme, is a perfect place for a break, to rest limbs weary from sightseeing or shopping and cool off in in a homey environment. They offer a variety of cool drinks, chai, and vegetarian quick bites—sandwiches, pizza, and pastas. Try the Brie basil tomato sandwich or the carmelized onion goat cheese tomato pizza. The place has a relaxed air and you can sit around as long as you like nursing a drink.

About half an hour's drive out of the center of town, and an upwards climb on a hillock, this is the place to have a traditional vegetarian Rajasthani thali, sitting cross-legged on the ground in a hut. The local delicacies—daal baati (unleavened wheat bread eaten with lentils), bajra roti (millet rotis), garlic chutney, sangri (a desert vegetable)—are tasty and especially authentic. Service is warm, but this is an experience for the brave—it is about sitting in a rural roadside setting where amenities are basic. There's a puppet show, Rajasthani folk dancing, and a handicraft shop.

This four-story, family-run restaurant is a good choice for Continental cuisine (think veggie burgers and Israeli salads) as well as Indian classics, with spice levels suited to the Western palate. Their pizzas and pastas are also popular. It's also a good place for breakfast—they usually stock a few pastries from the nearby bakery, and their paranthas (potato-stuffed flatbreads) are fresh and not too oily. They also serve "real" filter coffee. Sit up on the rooftop terrace for views of Pushkar and the surrounding desert.

This little roadside bakery and café, with courtyard or rooftop seating, sells fresh pastries and cakes, as well as delicious, real espresso—a rarity outside of India's major cities. If you come for breakfast, try the baked beans on toast or the soft cinnamon rolls, apple crumble, or date-and-walnut pie. The café is on a busy thoroughfare, but you can take your coffee and pastry upstairs to their sister venue Natural City View, (same menu). They also serve international dishes at lunch and dinner.

This small café and bakery offers a range of healthy, light food, be it a tofu stir-fry or herbal tea or interesting salads—something quite new to the town. If you have had one too many naans or paneer-butter-ghee packed lunches, head here for a sandwich with homemade bread, cheescake, or a healthy vegetarian or vegan meal.

Sip a chilled beer or wine and enjoy spectacular views of Jodhpur city at this romantically lit restaurant high up within the royal Mehrangarh Fort. Notable more for its ambience than the food, or the length of its menu, this touristy outdoor eatery is as good an option as any within the Old City, and it's specially fitting after an evening tour of the fort. Try the traditional Rajasthani food (tasty elegant veg and non-veg thalis), as well as standard tandoori favorites like mutton kebab and paneer tikka. On monsoon days they indoor a/c dining areas. It opens at 7pm.

Taking its name from the faux copper chimney at its center, this mildly faded restaurant has a regular clientele of business people and international tourists. It is best known for its standard heavy, North Indian dishes and kebab starters. The mutter paneer (peas with cheese) with butter naan and handi meat (slow-cooked mutton), rogan josh (Kashmiri-style spiced, buttered mutton) is exceptional. This is also a good place to try the traditional laal maas (mutton in gravy), Rajasthani-style kadai chicken (cooked in a heavy wok, and spicy), or tandoor (clay oven) meat dishes. The nine-item vegetarian or non-vegetarian thali (Rs 440) is good value for money. Alcohol is served.

The mood in the evenings at this twinkling, partly open-air haveli restaurant, located in the shadow of the lit Mehrangarh Fort, is memorably romantic. They serve both Indian and international food, including pastas, Mediterranean, and Thai dishes. Popular Indian dishes are the traditional Rajasthani laal maas (spiced well-marinated mutton), chicken curry, dahi kebab, and their paneer dishes. The chicken teriyaki and wild mushroom risotto are also delicious. Service is good, and there's a wide variety of drinks.

The sumptuous Mughal-style gardens of Taj's Jai Mahal Palace are the site of an al fresco barbecue restaurant – the Frangipani – that only opens in the evenings. The many frangipani bushes nearby was the inspiration for its name. It is open from October to March when the weather is pleasant. For approximately $30 per head they offer unlimited, eclectic selection of barbecue and grill delights like rosemary lamb chops, fish kasundi (fish marinated in mustard), achari gobhi (pickled grilled cauliflower), seekh kabab (minced mutton kebab), button mushrooms in pesto, barbecue chicken legs, prawn shaslik (kebabs) and more, as well as soups, salad and dessert

Off one of Jaipur’s main arteries, MI road, this garden restaurant offers Continental, Indian and Chinese cuisine. The restaurant attracts tourists more for its open-air ambience and Rajasthani dances (nightly at 7 pm)than for the food, though their boneless butter chicken is justifiably well known. Dishes tend to be mild in deference to non-Indian visitors: if you like spice request it.

After a long day of sightseeing, stop at this good but basic rooftop hangout– a couple of cane chairs and tables–at the Pal Haveli in the Old City. Go for a sundown drink or dinner and take in stunning views of the nearby lake, the fort, the clock tower, and the Umaid Bhawan Palace. The mostly Indian menu (kebabs and thalis are highlights) includes a couple of continental dishes and some Chinese food and a decent list of drinks on the bar menu. The ambience far exceeds to quality of the food which is slightly overpriced. Note that the steps leading four stories up to the restaurant are quite steep.

In a converted haveli at the end of one of Lal Ghat's labyrinthine lanes, this restaurant has retained the mansion's lovely design and has spectacular views of the Lake Palace, especially at night, when the vistas capture the incredibly romantic essence of the city. To see the brilliantly illuminated palace seemingly float on the water from a cushioned alcove is a signature Udaipur experience. There is a decently good range of Continental, Chinese, and Indian food; wine, cocktails, and beer available—Fish à la Jagat is a highlight during fishing season; otherwise try the laal maas (red meat curry), subz galouti kabab (vegetarian kebabs), or cannelloni paprika. Service can be slow. There's nightly live music during peak season. Great place for a cup of afternoon chai or lassi, too.

At the base of the fort, this little Italian restaurant has a lovely vibe. The interior is simple yet far from rustic, and the open rooftop area is perfect for people-watching. It also has a huge advantage: it is one of the only restaurants with an indoor area with air-conditioned comfort. The menu focuses on well-cooked vegetarian Italian pasta dishes and pizza, as well as good espresso and tiramisu. They also serve Spanish-style tortillas, quite a rarity in India. Beer is available.
