This is so really delicious . And easy. Preheat oven to 350. Put 4 cups chopped apples and/ or other fruit( i like it chunky) into a large bowl. Add 2 eggs and 1/2 c sugar, maple syrup or honey and 1/2 cup neutral oil And stir together. Sift in 2c flour( I use whole wheat pastry flour or spelt, but can use AP) , 2t baking powder and 1 t cinnamon( i add 1/2 t cardamom and or ginger). Mix well with a spoon until blended. Bake in 9 in round pan 2”” deep , 40-50 minutes.

Last night’s shrimp curry was quite good and I attribute that to all the really fresh vegetables that went into it. We’re thinking of talking a drive to a few farther afield farm stands to see what’s happening , but it’s muggy and might rain so maybe not. I am also debating driving into town for a blackberry ginger pie from the pie bar. What I am really debating is whether I wa IDinner plan is red snapper baked in butter and garlic, A chickpea and yogurt salad and some steamed spinach.

These are chickpea flour and chicken dumplings in a thin tomato sauce with cumin and poblano peppers. They are made from several different recipes but easy and delicious , and gluten free. I’ll make tgem again.

This is in The West Village ( NYC) yesterday. Some people, even at the center of this pandemic simply don’t give a hoot. Also , no intervention by police or anyone else. There’s a narrative that people who have been far from the action don’t get it, and so protest or flout rules. This disproves that.

Here’s the lentil bread just out of the oven. I grated garlic into it and used ricotta salada for the cheese. Letting it cool. I did distribute the seeds evenly but they migrated;( Will report back on taste later.

Here is our little treasure. The tabletop has a wavy design which my phone won’t capture. There’s a fourth chair too. We’re leaving Friday and we have gotten most of what we had wanted to get done accomplished. I will miss this little house which already feels like my real home. We’re eating out with a friend tonight at our favorite Chinese place. I had wanted to try a new Eritrean place but the chairs look awful and I’m not up for discomfort.
