While menus in Savelletri concentrate on fish and shellfish, a few miles inland the focus turns to meat dishes, with the nearby town of Cisternino being famous for their local grilled meats, including sausage and "bombetti". This sausage might be the best I've ever tasted, and the roasted potatoes were also great.
