DON CAMILLO'S version of eggplant parmesan, with Ragusana cheese substituted for the usual mozzarella..the eggplant was lightly sautéed instead of being fried......the tomato sauce was so far above anything I have ever sampled in the US....it's usually made here with a few varieties of Sicilian tomatoes and needs no sugar added while making the sauce. (20 euro)
