I have a trip report staying in various places (click on my name) but I don't think you really need an itinerary. It isn't as if you have to make reservations for the various sites in the park. Just have a map, maybe a guidebook and decide at breakfast every morning where you think you'd like to explore that day.
We had no reservations except a campsite at Madison, not far from W. Yellowstone, which we used just 1 night and then were able to get cancelled cabins every night thereafter. The location of the cabin dictated our route for the day and I was very lucky to be in the company of an old Yellowstone hand so had my own walking guidebook. But I think it'll be perfectly easy, based on my experience, to play it as you go.

Just realize that you will need to add extra time to your journey every day-and check for road construction updates. You can get to Grand Tetons-it will just be a long day. You should be fine. You can click on my user name for trip reports to both parks.
