Just about all of the stores in Times Square and 5th Ave are open on Sundays, except some of the more high-end stores and boutiques (Tiffany, Cartier, Van Cleef & Arpels). Saks is open.
Most of the stores on Madison Ave will NOT be open on Sundays, except some of the larger ones (Crate & Barrel, Coach, Barney's).

There are a number of stores in NYC that are closed on Saturdays for the Jewish sabbath including a majority of the stores in the Diamond District and some fairly high profile independent merchants such as B&H Photo ( a must visit store just because it's such a remarkable and efficient retail operation - must be seen to appreciate it). If you['re willing to venture off for non-mainstream store shopping, it's worth visiting the Orchard Street "Bargain District" on the lower east side. There are a few dozen or more merchants and the street is pedestrian traffic only for a few blocks with lots of merchandise on tables etc. There are some great baragains to be had in leather goods and haggling on price is an accepted practice at most vendors here.
