Hershey, PA is a good spot. The amusement park is great and it is the home of the chocolate company. Also in PA, you might want to think about Valley Forge and Gettysburg.
In New York, Lake George is geared towards families as is Fort Ticonderoga. Mystic Seaport in Connecticut is worth a trip as are many of the beach towns in New Jersey.

Hudson Valley = Hyde Park-FDR's home,The Vanderbilt Mansion,Rhinebeck Aerodrome.Lots of hotels,small motels,b&b's,antiquing (which I doubt the children would love
horse farms and Black Angus farms in Millbrook,lots of good food..I used to take my children when they were 5 & 9, we would go up every fall and apple pick and they still remember,they are both in their 20's now.My husband and I stay at the Beekman Arms a lot now, you probably don't want to stay there with the children..Also on the other side of the Hudson, Woodstock, still lots of tie dye shirts and long hair 
Have you ever gone to the Amish country? That is good weekend from NJ, there is Hershey Pa, lots of auctions,farms, although it is cold, so everything you do will be indoors more..For a long weekend you could go to DC...that is the best for kids, and cold weather..take a train or car.Good hotels,food, sooo much to see and do..good for the kids too~hope this helps a little.M

How about a farm vacation? If your kids like animals, they will be in heaven, and the parents will enjoy the beautiful, laid back countryside. One we stayed at many years ago was Harvey's Mountain View - a gorgeous working dairy farm in Rochester Vt. There are many others in Vermont, New York, New Hampshire, etc. Surf the web for each state to find some.

Don't forget Mohonk Mountain Lodge. Pricey, but absolutely the best for kids. They have arts and crafts, horse and buggy or horseback riding, a huge lake for swimming, paddleboating, kyaking. They show movies at night and throw barbeques in the afternoon. There is a golf course for Dad and a putput for the kids. 95 miles of hiking trails.
