Yes, back off and go with your original plan. The kids will hate the longer version...WAY to much seat time in the car. You won't be doing much more than driving through...for instance: "Day 6: tour Arches and Canyonlands" is not realistic...this would take 3 nights for 2 full days minimum. You need to accept that you can't do it all on this trip.
