I think Buffalo is quite a detour if you are not visiting the Great Lakes or something else in the general vicinity. More time in the Boston area....maybe the coast or the New Hampshire Lakes area would give you a much much shorter drive and more time to enjoy yourselves.
I don't think you'll find lodging lakeside or Oceanside arriving on Saturday the 9th, but perhaps 10th and 11th you could find availability. The Inn at Crystal Cove on Boston Harbor shows availability, or better still the Salem Waterfront Hotel or the Hawthorne Hotel just north of Boston. http://www.booking.com/hotel/us/hawthorne.html
Or if Rhode Island is your choice, looks like Newport Harbor Hotel has a family-sized room available. From there if you time it to avoid NY traffic, you'd have about a 5 hour drive to Philadelphia. As opposed to going to Buffalo from Boston which would be an 8 hr drive followed by 4 hours from there to Pittsburgh...or 6 hours from Buffalo to Philadelphia.

Option 2 seems to give you more time to actually enjoy some of the places you're visiting. But I think that Gatlinburg is too far out of the way for what looks like a week of hot, humid weather and thunderstorms.
If you want the "cabin" experience, look for something up near Lake Erie which is closer to Niagara Falls and less of a detour. Or for something near the falls....this place looks lovely if they have a cabin available that week: www.branchesofniagara.com
If you haven't visited DC before, I think that there is a lot to see there and would choose that area over Philadelphia. However if you only have one night either place would do I suppose. You might cut a night from "cabin week" and add it to DC or Phila. 4 nights in a cabin is plenty.

Re option 1, #3
The White Mountains are a mountain range in the State of New Hampshire.
White Mountain National Forest is a wilderness & managed resource (logging) area that includes part of (but not all of) the White Mountains.
Mt. Washington is the highest mountain in the White Mountains, and has a road you can drive to the top.
In the summer, the White Mountains are all green. Likewise, in Vermont, in the winter, the Green Mountains are all white.
