What month will you be going?
Try the Kokee State Park at the Puu o Kila or Kalalau lookouts...Waimea Canyon lookout..Kilaeua Lighthouse area...Sleeping Giant Mtn....Kalaheo at the Kukuilono Golf Course and just about anywhere in Princeville.
We stay at a place where we can watch a sunrise from our bed, right thru the balcony window. Beautiful way to wake up each morning!

Aside from my pal Kal's excellent suggestions, I also recommend Lydgate Beach State Park on the east side of Kauai. My husband and I did this last month and it was a terrific vantage point. Kilauea also offers a great backdrop, but as Kal says, the month of your visit will make a difference as to which is best.
