Jersey Girl:
Visit San Luis Obispo, especially on street market night (Thursdays).
We've done so several times and stayed at a delightful B and B
on Garden Street (two block walk to the site of the Thursday market....The Garden Street Inn (and remember, it's San Luis (not Looie). Breakfasts are most memorable.

If it works for your schedule, take tower's advice and go to the Thursday night market in SLO! Also stayed at the Garden Street Inn once and can recommend it.
Other possible stopping overnight stopping points would be Cambia, Morro Bay and Santa Barbara.
Also not to miss if you have time is Hearst Castle at San Simeon. There are also historic California Missions in several of the cities as you go south.
SLO and Santa Maria are both in the heart of the Central Coast wine region.

To reduce driving time and maximize great scenery:
Take Hwy 101 to San Luis Obispo, spend the night there, then take Hwy 1 to Morro Bay and on up to Monterey. Then take Hwy 156 to Hwy 101, then Hwy 85 to Hwy 280 and stay on 280 all the way to San Francisco.
