I think that Schlitterbahn can be done in one day but if you're really into water parks you can do it in two days, definitely not longer than that. Personally, I wouldn't stay on site but that's just me. A couple of things about Schlitterbahn in case you've never been there -- you can bring in a cooler with snacks and food for lunch and drinks if you like. The food there isn't very good so I personally think that's a good option. The river water is used in a bunch of the rides so don't be alarmed if you see dark water. Also, I hate to be negative but Schlitterbahn can be really dirty (it was when I went there) just to prepare you.

I absolutely loved it. I live in Oregon so water parks were new to me (I do love to swim though). Some time I intend to go and spend at least 3 days there. It is huge and I only saw one part of it in one day. I don't know about staying on site. The website pictures I saw look kind of grungy and old.

Schlitterbahn is a great place for weekend fun. And no, It's not dirty, Jessica.
Its the Anti-Waterpark. Its built into the lay of the land and takes advantage of a natural experience.....providing you accept water pumps! Lots of shade trees to protect from the Texas sun and a great park atmosphere. Its fantastic.

I take a group of high school seniors there every year and we love staying on site. At night when the park closes, you have the run of the park. The rides are not running but there are several pools, including a swimming pool size hot tub.
It's also nice to be able to go to your room during the day to rest, cool off, have a snack, go to the bathroom, etc. Most rooms have kitchens so you can save money and time doing some of your own cooking.
No, they are not fancy but I have never felt like they were dirty and I'm pretty picky.
You can do the park in one day but two would be fine. Another great thing to do in the area is to tube the Guadalupe River. We go to Gruene, just a few miles north of New Braunfels, and use the RockinR outfitters but there are others.
Take time to visit Gruene. It is a small little town with lots of charm. Gruene Hall is Texas' oldest honky tonk. It was used to film the bar scene in the John Travolta movie where he was an angle--can't remember the name.
Eat at the Grist Mill Restaurant with most tables outside overlooking the Guadalupe River. It's next door to Gruene Hall.
Speaking of eating, New Braunfels was settled by Germans and has several German restaurants.
San Marcos, just down the interstate, has a huge outlet mall. Actually, it is three outlet malls in one location.
You will also be close to San Antonio which is worth a day trip.

Schlitterbahn Waterpark is worth two days. It's similar to the Schmieren derHoden in Germany -- I think the two wondered if the two might be related?
You'll also be close to Claskoree, which is a sweet little town. Be sure to eat breakfast at Striefer's -- order the waffles!

Schlitterbahn dirty? No way. My sons are lifeguards there and I can tell you that its clean , clean ,clean. Not sterile like Disney because it is tree covered in the old park. The crowds can be heavy at times with long waits for short rides. Like any theme park. If you stay on the property you can enter early and get a jump on the crowds.

We live in Texas and try to go to the Schlitterbahn once a year in the summer...it's not dirty by any means. The comal river runs right behind it, that's awesome to float. If you stay on the property you are on the river. We go to the waterpark, can be done in one day...and float the river a different day, the river is clear...if you aren't bringing a car...it's best to stay on property...if you do have a car, the Rodeway Inn is nice and reasonable price (remodeled) and was great for four people and they offered free breakfast and discount coupons to schlitterbahn.
