Salt Lake city to Jackson Hole--Where to stop in between for a night?

Sorry, I don't have time to read that long thread you referenced just to figure out the other route you are referring to! Why don't you just say?
Regarding restaurants, there are many excellent restaurants in SLC, Park City, and Jackson, but other than that, don't expect gourmet fare. You are going to be traveling through lots of very small western towns and most don't have much in the way of "fancy".

No big deal re: restaurants - just thought there might be a noteworthy place along the way - you never know...
Anway, the thread mentions a Jackson-SLC route (so southbound) similar to yours, however the poster branched off WY 89 / UT 16 at Woodruff and took UT 39 to Huntsville, then UT 167 to I-84. Is that a particularly scenic detour?
On another note, how bad are the construction delays on I-15? If they aren't bad, I'm leaning towards taking the "classic" scenic route through Logan Canyon on US 89. The construction in Logan Canyon itself is scheduled to be largely complete in late August, when I take the drive.
