It's been awhile since I've been to Waikiki so I can't really give you specific restaurant recommendations. However, fish is obviously a big component of local restaurants. Give it a chance. I guarantee you that the fish you get there will be worlds away from any fish dishes you have tried on the prairies. I don't normally love fish (although I do like it) but the fish I've had in Hawaii has been delicious.

There's a wide range of medium priced restaurants in Waikiki. If you want to splurge a little and eat at (IMO) the prettiest setting, try the Hau Tree restaurant

Duke's Waikiki on the Beach is exactly what you are looking for... its in the Outrigger Waikiki... great menu, decent prices... lots of fun...

Keoni has Thai and American dishes, and the prices are good, esp. at breakfast and lunch. http://www.restauranteur.com/keoni/menu.htm the food is really good, atmosphere is quite nice.
Cheeseburger in Paradise has a good variety and nice location, fun atmosphere http://www.cheeseburgerland.com/Chee...iki_Beach.html
For dinner, I'd recommend Kani Ka Pila at the Outrigger Reef http://www.outriggerreef-onthebeach....ertainment.cfm I can't find an online menu, but the biggest reason to go is the music. the food is good too and the prices are reasonable.

The brunch at Shorebird at the Outrigger Reef hotel is very nice, with beautiful ocean views ($12.95pp sometimes coupons available).
Food courts are fun (International Marketplace, Ala Moana mall, Royal Hawaiian shopping center) because each person can see the food in advance and just pick what they want. Huge variety.
Not everything in Hawaii is exotic, there are plenty of place to get a burger and fries. Also lots of independent inexpensive breakfast places with specials (under $10) for pancakes, eggs, bacon especially along Kuhio.

Lulu's across from Kapiolani Park has good mac nut-banana pancakes. I don't know about their meals other than breakfast, but you can see the menu on Google. Dinner looks a little pricey. The restaurant is open air and on the second floor, and they have a pretty view if you can get a seat along the rail.
The Pineapple Room at Macy's in the Ala Moana Mall is a Roy's restaurant and very good. Their pineapple tea is great.
The smoothie place along the side alley at the International Marketplace has good, fresh sandwiches.

Shorebird - you can grill your own, steak, chicken, fish, and a huge salad bar. MAKE A RESERVATION or you wait a long time. Hua Tree is a lovely setting under a huge banyan tree right at the ocean - many choices splurge night. Hula Girl also good
