If I had only 7 days to spend in Arizona, I wouldn't spend 3 of them in Phoenix. Don't get me wrong, there is a lot to see in that area. But, if I had to make a choice, I'd spend most of my time in Sedona, Grand Canyon, Monument Valley and Canyon de Chelly. (Oh yes, I'd forget about Las Vegas...at least for this trip.)
If you must spend the 3 days in Phoenix, then I'd restrict the rest of your trip to Sedona and the Grand Canyon. As much as I love Monument Valley and Canyon de Chelley (two of my all-time favorites), it's just too much driving for 3-4 days.

I'm with Howard right down the line.
I used to live in Phoenix and it doesn't have all that much going for it that you'd want to prioritize it as a vacation destination over the other spots on your list. And going to Vegas should be a separate trip. Seeing the best parts of AZ in 7 days is a squeeze. Seeing Monument Valley is certainly worth some extra effort, but you better like driving and be getting along swimmingly with your compadres.

We did the Apache Trail near Phoenix. It was wonderful. Don't worry about the 24 miles of gravel dirt road, it was just fine. You can make a big circle and see Roosevelt Dam, copper mines, etc. Just great!I wrote a trip log about this on www.epinions.com. Travel>Arizona>Apache Trail. It's a all day trip.
