If you're not used to humidity, it can be a problem. The humidity won't be as bad, but you'll still have it.
I would take a condo with AC-you might not need it, but you'll be very uncomfortable if you do need it and you don't have it.

It completely depends. Maybe it will be a little warmer than normal in December when you're there, maybe it will be extra humid, maybe your room doesn't have windows set up to get a good cross breeze, maybe the breeze isn't as strong as usual, maybe the condo has ceiling fans, etc... I'm from Florida so heat and humidity are nothing new to me and last December when I was in Hawaii, I ran the A/C every night at bedtime. Some people have a higher tolerance for sleeping in the humid air, I don't. The fact that you are concerned enough about it to inquire suggests you'd be happier and more at-ease getting place with A/C. Look at it this way, do you really want to regret being too hot because you were trying to save $10-15 bucks a night?
