Depending on the time of year you're planning to go, Cheekwood Botanical Gardens would be a good choice. Also, the new Frist Center for the Visual Arts downtown is very nice. See if there's an event at the Ryman Auditorium when you're in town because that's a great venue. The other obvious options are the Grand Ole Opry and hanging out at the Opryland Hotel, which can be fun, especially in the new Delta area.

Do stay at the Opryland Hotel...and treat yourself to a conservatory room overlooking the gardens. It is beautiful. YOu can wander around the gardens inside the hotel and enjoy the waterfalls.
As Philip stated, Opryland park is no longer there.
