The Seawatch in Wailea is great for breakfast or lunch - dinner too is you like Pacific Rim menu. Joe's Bar and Grill in Wailea and Haliimaile General Store in Haliimaile are great. Five Palms in Kihei is great for a splurge breakfast but very disappointing for dinner.

We visited Maui in February and had some excellent dinners. Roy's is always a great choice, be sure to have the chocolate souffle for desert. Nick's Fish Market at the Kea Lani in Wailea and David Paul's Lahaina Grill were even a step above Roy's - they were incredible.
Last April we stayed in Poipu. We enjoyed Roy's there also, Brennecke's Beach Broiler was good for a more laid back lunch or dinner.
