Mamane St. Bakery Macadamia Honey Bran Muffin recipe
Yes, I did post this in the lounge first but didn't get much help. I had these muffins at the Kona Coffee Shop in Kings Shopping Center and also purchased them at Whalers Village. They are sticky, yummy, upside down muffin and I would like to make some. I haven't had much luck searching for a recipe so I am appealing to you all - do you have a similar recipe? I'd love to have it to make for my BF who is recovering from back surgery. Thanks and Mahalo!

Is this what you are looking for? It doesn't have the honey but you could always drizzle it on after you take them out of the pan.
4 TB butter, melted
2 large eggs
1 ½ c. crushed pineapple, with liquid
2 ½ c. all purpose flour
¾ c sugar
3 tsp. baking powder
1 ½ tsp. salt
½ tsp. baking soda
1 c. bran flakes
1 c. macadamia nuts, chopped
Cooking Process
Preheat oven to 350 degrees. Lightly oil 24 muffin tins. In a mixing bowl; stir together butter, egg and pineapple. Add dry ingredients and mix well. Stir in bran flakes and nuts. Scoop into prepared muffin pans. Bake 30-35 minutes.
how to serve
Makes 24 muffins.

That looks pretty close except there wasn't any pineapple in it. I'd rather have pineapple than butter though! Have you tried it? In the honey bran muffins the mac nuts would be in the bottom of the pan so that when inverted, are on the top like a pineapple upside down cake. Thank you for posting the recipe.

OK getting closer. This one has pineapple in it and I did use half oat bran since I was low on wheat bran but it is pretty darn close. NowI just have to decalorize it. Reduced canola oil to 1/4 cup. Used 1/4 cup honey since I was given a tub of honey from France and 1/4 cup brown sugar. No raisens. No orange. No cardamom. Used macadamia nuts in topping. Didnt drain the pineapple. Actually I used a different recipe for the topping.

1/4 cup brown sugar
2 T honey
1 T water (oops forgot)
1/4 macadamia nuts
I thought the topping was still a bit heavy. Want more of a glaze..Oh well, just have to try again...and again...and again!
