Hi Stacy: We stayed at the Islander, which is exactly 2 doors down. (There is a new Kauai Coast Resort timeshare property between the two). We walked to the Coconut Beach, I wasn't impressed with any of it. The Islander IMHO has it beat hands down, at the same or lower price. The beach is definitely rockier and you'd have to walk up a ways (the Islander) to enjoy any water.

Just read a trip report from a recent visitor to Kauai on a different site and here's what he says about Coconut Beach Resort:
The room was mediocre, though the view, which was supposed to be the low-end ocean view, was quite nice. Not a big balcony, but it overlooked the courtyard/pool area and then straight out to the ocean, only a couple hundred yards away. I think I would rather have this view than the full ocean view because of the nightly entertainment in the courtyard. The rooms themselves are barely more than a mediocre motel chain's, like Holiday Inn, Super 8, or the like. Slightly better than a Motel 6. It has the usual resort annoyances like charging for local phone calls. It did have a refrigerator, but few other amenities. I would suggest getting a room on the top floor. Everything is available through an elevator only, you'll get a better view, and the vaulted ceilings make the rooms feel more spacious. The restaurant is crappy (it's called the Flying Lobster, but we referred to it as Red Lobster because that's about it's level, but for more money). The Luau is decent and had decent food and free drinks, but I heard there is better on the island and after seeing the Polynesian Cultural Center's performances on Oahu, most Luau's will seem paltrey. But it's still worth going to. Make sure you pay the extra $5 for the good seats. The nightly entertainment starts at dusk and has a torch lighting ceremony and about an hour of hula dancing and singing -- a fun addition. The beach is very close. It's not good for swimming, but fine for sunning. There aren't many good beaches for swimming on this part of the island and the best spot is just a 2 minute drive. The resort is well situated on the island in Kapaa. It's about halfway between Waimea and Hanalei. It's only 10 minutes from the airport, 20 minutes from the popular and ritzy Poipu, and 30 minutes from Hanalei (where the celebrities buy their homes).
Hope this helps, more trip reports on:

I would skip Coconut Plantation entirely and head for the Pali Ke Kua resort in Princeville. http://www.marcresorts.com/palikekua.html
The North Shore is the most beautiful part of Kauai, the most beautiful Hawaiian island. Get yourselves a 1-bedroom condo, cook your own breakfast, have your coffee and cocktails on your own balcony, overlooking the most gorgeous view in the world. This is what you came to Hawaii for!
