If you come in via LA, you can drive to Las Vegas, and fly LV to Orlando.
Then coming back home fly Orlando to SFO.
I agree that if you are in fact going to Orlando you should skip the theme parks here, and just do the tourist circuit which seems to be Hollywood , Beverly Hills and Venice Beach/Santa Monica. I don't think coming from Sydney you will be impressed with Los Angeles beaches, but I know tourists like to ogle at the 'scene'.

Agreed. That would be a good way to break up the trip as well. I think Southwest and Delta fly from Vegas to Orlando.
would love to catch a football game if we can somewhere
Do you mean American football? If so, note that there is no professional (NFL) team in Los Angeles. If you did it in LA, you would have to do one of the following (assuming the schedule works out):
- Go to San Diego to a Chargers (NFL) game (I'd maybe couple it with an overnight and go to the zoo)
- Go to a college/university game - both UCLA and USC play at a very high level and in large, historic stadiums
Alternatively, you could wait until you get to SF and do one of the following (again, schedule permitting):
- Go to Oakland to a Raiders (NFL) game
- Go to Santa Clara to a 49ers (NFL) game
- Go to either Berkley or Stanford (Palo Alto) to catch a college/university game - again, both Berkley and Stanford play at a very high level, with Stanford being among the best teams in the country the last few years
Finally, you could consider going while in Florida:
- Go to Tampa (within a couple hours of Orlando) to see the Bucs (NFL)
- Go to Jacksonville (a bit over two hours from Orlando) to see the Jaguars (NFL)
- Maybe tacking on a couple of days in Miami, you could also try to go see the Dolphins (NFL) in Miami
- Go to a UCF game in Orlando (college/university) - UCF is a good team, but the league they play in is less prestigious than the California schools above
