How long would you recommend a stay in Vegas?

You could also drive three hours over to incredibly beautiful Zion National Park -just beyond St. George Utah, and take in Bryce also (less than 2 hours from Zion?) -if you have another day or two.

I was almost dragged to Vegas a few years ago. I am not a gambler and am not interested in hotel dining. We spent 4 nights at the Bellagio and I had a blast! In your case, I think 3 nights would be good, especially since you want to see a few shows. The people watching is great! If you are interested, there are some excellent off-strip Asian restaurants that I would recommend, including one of the best Thai restaurants in the US. Contrary to what I had thought, a few days there can be a lot of fun. I will probably not visit again, as there are too many interesting places on my list, but I do not regret my last trip.

If anyone is looking for good German food in a beer garden setting, try the Hofbrauhaus (Paradise @ Harmon)

My DW and I had a Christmas dinner there a few years ago.
The entertainment during dinner included an alpenhorn.

1) I think 4 days is about the max that I want to spend in Vegas as a first-timer.
2) You could extend that if you are an avid golfer (though I'd probably stay in Vegas and then tack on Phoenix/Scottsdale for a dedicated golf portion of the trip).
3) You could also extend it, depending upon the time of the year, if you are really, really, really into partying.
4) Stay on the strip, rather than the outlying areas.
5) "the food can be found in every other city in the US" - Which other cities is that? Yes, the likes of Chicago, New York, LA, and San Francisco should measure up, but the concentration of truly excellent restaurants in Vegas is pretty startling. And... reservations can be easier to come by than in some other cities.

Mu first instinct was to respond "only as long as it takes to get to your connecting flight" as I am decidedly not an LV fan, but ekscrunchy's post reminded me of the wonderful meal we had at Lotus of Siam. Lotus of Siam - yes, Yes, YES, YES!

I went to that Thai place in Vegas - the "best in the US" - and liked it - but there were at least 3 or 4 in San Diego just as good.
Starting about 10/15 years ago - when Steve Wynn opened the Bellagio - he made an effort to bring in out of town chefs - from NY and SF - and the Vetas dining scene has only gotten better since then.
Loved Ciro's place at the Bellagio - Le Cirque -and he opened a new one at Aria? (which his son manages?) - somewhere in the behmouth City Center, Jean-George opened a great steak place - Prime - replete with fixed switchblades for steak knifes and Mena - was it - from San Francisco - opened Aqua which now bears his name - and last but not least - Julian Serrano (SF) opened Picasso - a marvelous place to dine amongst what - $50 million in art (or used to be when Steve owned it) - while watching the incredible fountains out the window.
And for mid-range Italian - no better place than sitting on the open air deck at Olives - while watching the magnificent fountains - where the water cannons have many, many different programs.
Was fortunate to dine at all of these when Bellagio first opened, and also love the Chefs/restaurant's at Steve's new place - appropriately enuff called - Wynns.

Actually - Steve's newest place is Encore - next to Wynn - which opened a couple of years ago. Was fortunate to help out with a charity once in Vegss - and Steve guided us through his personal art collection at Bellagio. I loved Degas - the Dancer -but so many great Impressionist pieces.
Also had dinner next to him on a father's day - at Wynn's - just a coincidence - and he had his whole family there. Great guy.
