Jurassic Park's oudoor park scenes were filmed on Kauai, not Oahu. Jurassic Park III, opening this summer, was also filmed there.
Interestingly, Jurassic I was not yet finished shooting when hurricane Iniki swept through and devastated the island, while the film crew was huddled in a hotel.
There is horseback riding available on Kauai, but not in the canyon where the movie was filmed (that I'm aware of).

You can go horseback riding at Kualoa Ranch, on the windward side of Oahu. Parts of the movie "Pearl Harbor" were filmed there, as was the modern "Fantasy Island."

Oh, yes!! i totally forgot--the movies are all gelling into one.
BTW, we were talking about horseback riding today and my friend mentioned going out to Mokuleia (on Oahu's North Shore). I'm not familiar with the procedures, but there is a polo field and Dillingham ranch, so that is also an option. You can also do horseback riding at Waimea Falls Park, which is located on the North Shore, farther out from Mokuleia.
