San Antonio
The river walk in San Antonio is a great place for a stroll, or to sit back and enjoy an outdoor restaurant. The town has a cozy feel, much can be seen on foot, or the trolly that stops at all the major attractions. Do a search on this forum, many posts have been made about positive experiences in San Antonio.

San Antonio is your best bet. Stay at the Hilton Palacio Del rio, or at the River Center Marriott (not the River Walk Marriott). Or you can even stay at the Crockett Hotel in a truley haunted room (no kidding)! While most of the restaurants on the River Walk are touristy ones, try the restaurant at the La Mansion Del Rio Hotel and the Fig Tree restaurant for a romantic (although expensive) dinner with good service and fantastic food. You could also try the revolving restauarant at the Tower of the America's for a fantastic view of the city at night, although its a little more casual and the food is not gourmet quality. There are alot of things to keep you busy if you venture outside of your hotel room- The River Center Mall, The Alamo, Omni theater, regular theater, numerous nightclubs and restaurants on the river walk, Planet Hollywood, Hard Rock Cafe, etc. You might want to look into Galveston, Padre Island, or even Corpus christi if you like the Ocean and "simpler" things

I would have to highly recommend Austin/Salado. Austin is incredibly funky, with lots of culture and the most incredible restaurants. You can go to Zilker Park and swim in Barton Springs (a dammed up section of the Colorado River) or in the same park, rent very cheapy a canoe. Lots of fun! And for the nightlife, 6th street is always a blast. The drive down 2222 towards the lakes is something right out of a movie where they're driving on these cliff roads facing the mediterranean. Veerrry romantic!
Just north of Austin off of Interstate 35, is a little antique shopping town called Salado. The bed and breakfasts there are wonderful and incredibly romantic as well.
South of the austin area is San Marcos/New Braunfels where you can find not only the best outlet shopping around, but you can rent innertubes and float down the river all day.
And you can still drive just a little south and wind up in San Antonio!

Another popular Honeymoon destination is Marshall, historic town on Caddo Lake in east Texas. Marshall has LOTS of Bed & Breakfasts, plus it's a very romantic town that caters to honeymooners.
Waxahachie, just south of DFW, is another wonderfully quaint town with lots of B&Bs and good local restaurants.
Of course, San Antonio, Fredricksburg and Salado also are great!

If you go to San Antonio, by all means spend some time at the other missions besides the Alamo, especially the Mission San Jose. It is the most beautiful and romantic spot in all of San antonio. Also very romantic there is the McNay Museum and its grounds and the Japanese Sunken gardens.
There are lots of great hill country towns outside of San Antonio and Austin, like Wimberly, Fredericksburg, Boerne, and Comfort. The Hyatt Regency's Hill COuntry Resort is great. Near Fredericksburg is a special place called Enchanted Rock, pefect for hiking and the site of many marriage proposals in Texas.

Just wanted to add a thought to this, as sixteen years ago we honeymooned in Texas in May. We must have done SOMETHING right, as we still feel like newlyweds!
Anyway, we spent a week at the cabins of Spicewood on Lake Travis, about 50 km west of Austin. We were alone in a quiet place with nothing to do but get to know each other. That's not EVERYBODY'S idea of a great honeymoon but, if you just want to relax, check out the cabin resorts in the Hill Country.
