The best islands for all around activity are Maui and Kauai. There are great resorts on Maui at Kapalua and Wailea. Rent a car and see all that you can. Go up to Haleakala early and see the sunrise. Kauai is great for laid back Hawaii. On Oahu see the Arizona Memorial and Punchbowl NationalCemetary and Iolani Palace. Aloha.

Since you enjoy sightseeing most, I'd recommend that spend one week on Maui and one week on the Big Island of Hawaii. The Big Island offers great opportunities for exploring its varied natural wonders (volcanoes, waterfalls, gardens,ranchland, flower farms, etc) which make for fun half-day or full-day trips by car, returning to your hotel for a relaxing swim in the ocean after your exploration. Maui is more developed, but still enjoyable and offers alot of activities, with easy access to sights around the island.
As far as resorts and specific sights, this site has tons of information...simply do a search of prior posts. Once you have decided on your destinations, follow-up with more specific questions which many will be willing to respond to.

I'd recommend 2 (maybe) nights on Oahu if you'be never been (pearl harbor, hike diamond head, Hawaiian Village, Waikiki, etc) and head to the big Island. We spent a week this past summer (I used to live in Hawaii) at the Mauna Kea Prince and would highly recommend it. If you go to the Big Island, I'd recommend spending one night in Hilo or near the Volcano National Park as it's a good 2-3 hr. drive from Kona area.

My wife and I have been to Oahu, Maui, and Kauai so far, and Kauai is our hands down favorite. It has the inspiring Waimea Canyon, misty and romantic Hanalei Bay, and several great beaches. At Poipu Beach we saw a couple of Monk seals( now protected by law) having a snooze on the beach.
Gaylord's is a lovely restaurant, on an old plantation, with great food. And if you want a Sunday brunch option, the spread they put on at the Ilimi Terrace at the Hyatt in Poipu can't be beat.
We stayed at the Banyan Harbor resort, a very nice condo. Our unit was a 2 bedroom with full kitchen & 3 balconies that we got for about US$85 a night. The only downside to it was that it's close to the island's harbour and there was considerable early morning truck traffic. Otherwise, a very pleasant place to stay.

Happy 25th.to you. We are also having our 25th. in Febr. and We are going back to Kauai. This will be our 3rd. time there and we love it more each time we go. It's true Paradise. I agree with every word Gerry said. We stay at Princeville in a condo at the SeaLodge complex. They are very reasonable and very nice. The condos here sit on a bluff with great ocean views. The North shore is the most tropical part of the island. If you want a condo on the beach check into Kapa'a or Po'ipu. Go buy a "Hawaii" mag. and look at all the rentals in the back. This is where we found ours at Princeville. Also buy the book " The Ultimate Kaua'i Guidebook" it will be you're best guide to everything. Have a great 25th. Ann. and trust me, Kauai is a piece of heaven.
