Great Smoky's Cabins
I plan to travel to the Smoky's over labor day weekend and sped 3-4 nights in a cabin. I live in Manhattan and we are looking for a calm vacation for the long weekend.
There are so many options for cabins it's overwhelming. I was wondering if anyone has suggestions on companies and locations. We would prefer to have something that is secluded and off the beaten path. We want to relax and hike. I want something that is really nice, not concerned about the price per night.
Any suggestions would be helpful.

Are you planning to visit the Park ? If so, it is a tad more difficult to get away from 'stuff' but still quite possible. We always use vrbo. I like other areas for getting away though, on the NC side of things...

What parts of the park interest you? For places like Cades Cove, you might look at Townsend, TN. I've rented from Dogwood Cabins and they were great - it sounds like you want something pretty luxurious, so that might not fit the bill, but it'll get you started at least.
Labor Day will be pretty crowded in the park itself, so I'd expect most popular attractions and hikes (Cades Cove, Laurel and Abrams Falls, etc) to be pretty crowded. But if you rent a cabin somewhere like Townsend (I'm not as familiar with the NC side), at least your "home" will be pretty calm.
